Scoby Growth

We have collaborated with some colleagues to grow Scoby as a potential material to explore. Scoby is a by-product of kombucha fermentation. When dehydrated it can exhibit extremely high UTS – it has potential to be a Vegan replacement for leather. Some of our batches went mouldy and unfortunately, our first batch was attacked by fruit flies during the dehydration process. We are currently devising a better strategy these mistakes are not repeated.
